Christmas Bakery – Recipe for Spekulatius cookies

Back

Just a few more weeks and Santa Claus will be here so Christmas is not far away. But what would the Christmas season be without the wonderful smells of freshly baked biscuits in your house? Use your gazebo as your Christmas bakery this year. There you and your family can prepare the biscuits in peace and quiet and then bake them in your kitchen. It is of course ideal if you already have a kitchen or oven in your garden house.

What could be baked?

In principle, you can prepare anything you want in the garden house. You need to know in advance what materials you will need and whether they are already available in your garden house by reading recipes. Especially if you do not have a large kitchen in the house and want to bake together with friends or your children, using the garden house is very easy. If you don’t have an oven in your garden house, you can prepare everything in the garden house and bake it in the house’s oven.

Our recipe for you!

Before you turn your garden house into a Christmas bakery, you should think about what you want to bake. A traditional Christmas biscuit in the Netherlands and Germany is Spekulatius. This is usually baked in the form of crispy biscuits. A particularly beautiful appearance gives the biscuits the relief shape, which you can make in different ways in the dough, but more about that later. First of all, we will focus on the ingredients that should not be missing in the preparation of Spekulatius.

Ingredients for approx. 60 Spekulatius biscuits:

  • 500g flour
  • 2 teaspoons baking powder
  • 250g sugar
  • 100g ground almonds
  • 200g butter
  • 1 bag of vanilla sugar
  • 1 pinch of salt
  • 2 eggs (M)
  • 1 packet of Spekulatius herbs

Preparation

1. First, sieve the flour into a bowl to crush it. Put the ground almonds and baking powder in the same bowl and mix well. Let the butter soften and add the sugar, vanilla sugar, salt and eggs to the bowl. Mix this together with a hand blender to a smooth dough. Let the dough rest for half an hour in the fridge.

… after 30 minutes …

2. In the second step, you have two different options to achieve the special appearance of the Speculaas biscuit.

First you can squeeze the dough into the appropriate moulds, remove the excess dough and knock the moulds upside down on the table, so that the dough with the pattern comes loose.
The second option is to use a grooved roll, which can be ordered online or from a specialist baker. Roll out the dough thinly, sprinkle the dough generously with flour and roll the grooved roll over the dough with sufficient pressure with the roller.

3. The finished shapes are now placed on baking paper on a baking tray. In the meantime, the oven is preheated to 180°C.

4. Finally, bake the biscuits in the preheated oven for about 10-12 minutes until they are light brown. Let them cool down for a while and try them out!
